  In nature, Armoracia rusticana (horseradish) is a perennial plant species in the Armoracia genus (horseradish genus) of the Brassicaceae family within the Brassicales order.

  A major sulfur containing-compound in the intact root of the Horseradish plant is a sinigrin which has little aroma.

When the root is bruised, cut or grated, the enzymes from the damaged plant cells break down sinigrin (a glucosinolate) to produce allyl isothiocyanate (mustard oil) and sulfate.

In phytochemistry, Armoracia rusticana (horseradish) contains: ascorbic acid, the flavonoids kaempferol and quercetin. **
